Cheese Dots stuffed with Blue Cheese Cream & Cranberry Jam, stacked to look like a Xmas tree
How to make
For the Blue Cheese Cream:
Place blue cheese and cream cheese in a food processor and blend until it comes together.
Add cream and blend.
Add olive oil and blend.
Make sure it is a spreadable consistency. Not too soft, not too hard, add more cream if it's too hard.
Transfer to a piping bag with the nozzle, if using.
For the Cranberry Jam - best if made a day before
Put all ingredients in a pot and bring it to a boil
Once it starts to boil, reduce to simmer.
Let it cook, stirring occasionally, until thickened, and you can see the bottom of the pan once you stir with a spatula.
Separate 3/4 of the jam and store it in an airtight container in the fridge.
Using an immersion blender, blend the remainder of the jam until you have no lumps or cranberry pieces.
Transfer it to a piping bag with the nozzle, if using.
To assemble:
Bake Cheese Dots according to package instructions.
Once they come out, use the chopstick to make a hole on the side of the Cheese Dot, until it reaches the center.
Pipe your filling, alternating between the blue cheese and the cranberry. You want to have 6 blue cheese and 7 cranberry ones, but poke a hole at the top of the last Cheese Dot - this will be the top of your tree.
To assemble, lay 5 Cheese Dots on the base. The second layer will have 4 Cheese Dots, then 3, then 1.

For the Blue Cheese Cream:
100g blue cheese
100g cream cheese
2 or 3 tbsp of 35% cream
a drizzle of olive oil
For the Cranberry Jam
3 cups of frozen Muskoka cranberries
1.5 cups of sugar
0.5 cup of water
1 cinnamon stick
To assemble:
13 Cheese Dots
2 small piping bags
2 small "cream icing piping" nozzle - optional
1 chop stick
